Doves Farms mill their large range of flours from many different natural grains, beans and seeds without adding refined gluten or enzymes. They blend specific grain varieties to ensure that the resulting flour has the optimum characteristic for the type of baking it will be used for. This means soft wheat varieties for cakes and pastries or stronger hard wheat for bread making flours. The more unusual flours have distinctive characters and applications of their own.
Gram Flour is milled from naturally gluten and wheat free gram or Chana Dahl, a kind of small chickpea, with a fine pale yellow colour flour is used to make onion bhajias and other Middle Eastern or Indian dishes. Sometimes called Besan flour, it is also useful for thickening sauces.
Gram, or chana dhal is a member of the chickpea family and is most commonly used in recipes throughout the Indian subcontinent and Middle East. Often known as besan, it is a large split skinned pea which we mill finely to create this rich yellow flour. It is best used in fritters, pancakes or traditional Indian dishes and can be used as an egg substitute if mixed with equal quantities of water.
