Liquorice is a tangy sweet flavoured herb akin to star-anise and aniseed. These ‘liquorice sticks’ can be chewed on, to release the flavour. In China and other parts of South-East Asia they are made into decoctions (boiling the root in water to impart its flavour) or placed straight into cooking and removed before serving to flavour foods. This decoction can be used in sweets and pudding dishes in Western cooking for seasoning. In traditional herbal medicine, liquorice is used as an adrenal tonic, de-stressor, anti-inflammatory agent and an expectorant.
